1 January 2023. Happy New Year! Here's to a new start, a clean slate, a reset. After a month of treats and indulgences, we are ready for fresh, clean flavors and there's no better way than trying out a new salad recipe.
We love the Mango and Avocado salad that's printed on our 2023 Calendar Cloth by Isabelle Boinot. We've translated her version into English with our high school French for you below. Amounts are deliberately vague and can be adjusted to your preferences. We hope you'll find it as refreshing as we do.
Mango and Avocado Salad
2 ripe avocados
1 ripe mango
1/2 small red onion, chopped fine
juice of 1 small lemon
freshly grated Parmesean cheese
freshly ground black pepper
Peel and chop the mango and avocados into small pieces and place in a bowl.
Add anywhere from a tablespoon to a handful of chopped red onion depending on your preference.
Add the juice of one small lemon and a drizzle of sesame oil and give the salad a gentle toss.
Grate some Parmesean over the top and add a sprinkle of kosher salt and freshly ground black pepper. Toss again gently and serve.
